PINEAPPLE CAKE

3 cups flour, sifted
1 tbsp. baking powder
1 tsp. salt
3 eggs
1 cup sugar
1 can (1 lb. 4 oz.) crushed pineapple, drained
1 cup nuts, chopped
10x sugar, for dusting

Preheat oven to 350 degrees. Resift flour with baking powder and salt. Beat eggs until light and lemon colored. Gradually beat in sugar until mixture is thick and ivory colored. Fold in pineapple and nuts. Blend in sifted ingredients gradually. Turn into greased 9 x 13 x 2 cake pan. Bake in 350 degree oven for 20 to 30 minutes. Set on wire rack to cool. Dust lightly with 10x sugar. Cover cake loosely with foil. Makes 10 to 12 servings.
